Before first use:
- Wash the knife gently with a soft sponge and dish soap, rinse it well, and dry it with a cloth or a kitchen towel.
- If you find any defect on the knife, please do not use it and contact us instead.
Care when using it:
- Our knives arrive sharp, so handle the knife carefully to avoid cutting your hand or fingers on the blade.
- Do not use the knife when it is bent or broken.
- Keep the knife away from places that children can reach easily.
- While cutting, the blade should stay parallel to the surface you are cutting on, so that it does not break, bend, or crack.
- Do not use the knife on hard materials such as stone, steel, or other metals.
- If the blade gets stuck in dense vegetables such as pumpkin or watermelon, pull the knife back along the direction in which you started the cut (applies to Damascus steel, German 1.4116 steel, 1080 carbon steel, and 4Cr13, 5Cr15MoV, 8Cr13MoV).
- Do not use the knife as an opener.
- Do not leave the knife near a fire, as the heat will damage it.
- Cut frozen vegetables or meat only after they have thawed completely (especially for Damascus steel, German 1.4116 steel, 1080 carbon steel, and 4Cr13, 5Cr15MoV, 8Cr13MoV).
Care and storage:
- After using the knife, wash it with a soft sponge and dish soap, rinse it well, and dry it with a cloth or a kitchen towel (for Damascus steel, German 1.4116 steel, 1080 carbon steel, 4Cr13, 5Cr15MoV, and 8Cr13MoV).
- To protect a blade made of 1080 carbon steel, or of any steel with a medium carbon content, apply a thin layer of oil after drying (kitchen oil is fine).
- Store the knife in a dry place. Keeping it somewhere damp, or soiled with salt or acidic substances, will cause rust.
- After using it on vegetables or fruit with high acidity, such as lemons, please wash the knife immediately, so that rust spots or marks do not form on the blade.
- If rust appears on the knife for any of the reasons above, please clean it with a rust remover or with vinegar, and sharpen it again, preferably on a stone.
- Do not dry the knife in a microwave or in any other kind of oven.
- Do not leave the knife in water for a long time, as this causes rust or corrosion of the handle.
- Do not wash the knife in the dishwasher. The high temperature and the large amount of detergent can corrode the handle and rust the blade.
Sharpening the knife again:
- We do not recommend a simplified sharpening tool, because it changes the angle of the blade.
- We recommend using a sharpening stone or a honing steel sold or recommended by us.
- Wet the sharpening stone together with the blade, then sharpen according to the grit of the stone.
- We recommend repeating the process at least once every three months.
